Cellar Notes: “Our intention with this wine was to create a Vin Santo style wine. Vin Santo is a traditional dessert wine made in Italy where grapes are picked at normal harvest sugars and then dried for months to increase the sugar and concentration before pressing and fermenting to make an interesting, concentrated dessert wine. We picked our estate Vidal Blanc from our La Esperanza vineyard at 22° Brix into shallow fruit bins that we brought to our neighbors at Van Til’s Greenhouse in Glenn, Michigan where we dried the grapes for 30+ days, causing the Brix to increase to 34°. The grapes were pressed in a traditional basket press and fermented until there was only 10° Brix remaining. In an effort to bring extra complexity to this wine, we blended in some late harvest Vignoles to bring flavors of grilled pineapple and added acidity. The wine aged in stainless steel for two years prior to bottling.” - Andrew Backlin
