Wine Notes: Bête Noire is made with the Chambourcin grape. This wine is made similar in style to the famous Amarone from Valpolicella, Veneto, Italy. The Chambourcin grapes were dried for 4 months, gently pressed and then fermented. The drying of grapes concentrates the sugar which means there ends up being more yeast to ferment into alcohol, making a dense and rich wine. For fans of Amarone style wine or even Port, this wine is for you!
