Cantina Bolzano Sauvignon Mock is a single vineyard Sauvignon Blanc from steep, gravelly slopes in Bolzano, planted at around 500 meters above sea level. The vineyard has been farmed by the Platter family for generations, with the historic property documented as far back as 1275. Today, vegetation cover and cover crops including yellow mustard, oats, and clover help protect the steep vineyards from erosion while supporting biodiversity.
They have produced Sauvignon Mock as a varietal wine since 1987. The grapes are hand harvested in mid to late September, followed by a short cold maceration, gentle pressing, and fermentation and aging in stainless steel.
The wine is pale straw yellow with greenish hues, showing aromas of nettle, peach, grapefruit, acacia, and elderflower, with mineral notes of flint emerging with age. The palate is crisp, aromatic, and full flavored, with active acidity and a persistent finish.
This is a distinctive, site driven Sauvignon Blanc that balances the grape's fresh, herbal character with the mineral influence of its mountain vineyard. It is an especially natural match for goat cheese, smoked salmon, salads, vegetarian dishes, and asparagus.
