Vineyard Notes: The Merwah comes from 150 year old vines in Dimane, in the Qannoubine Valley located at 1,600 meters above sea level. The Viognier comes from a vineyard in Ainata in the Bekka Valley, located at 1,700 meters above sea level. The soils are limeston and both vineyards are farmed organically.
Winemaking Notes: The wines are pressed, and stabulation happens in tank at 8c for 5 days. This allows for the juice and pulp to spend time together before fermentation starts. The wine then starts fermentation for about 20 days at 14c, before being bottled at 3 PSI. It completes fermentation in the bottle, where it rests on lees for 5 months. It is then disgorged in February.
