Vineyard Notes: Grapes come from 10-year old vines in Deir El Ahmar in the Bekaa Valley. The organically farmed vineyard is located at 1,200 meters above sea level and is planted to limestone soils.
Winemaking Notes: Grapes are hand-harvested in September, and destemmed into a concrete tank. The tank is then sealed and semi-carbonic fermentation with the native yeasts slowly goes on for up to two weeks at 25 degrees Celsius. The skins of the Cinsault grapes are pressed off and the fermentation continues for an additional week. The wine is then left to go through natural malolactic fermentation.
