Vineyard Notes: Grapes come from a single organically farmed vineyard in Deir El Ahmar, in the Bekaa Valley, located at 1,200m above sea level. The vines are 10 years old and the vineyard is planted to limestone soils.
Winemaking Notes: Grapes are harvested by hand in September and destemmed into concrete tank. The tank is then sealed and native fermentation takes place for up to 2 weeks at 25 degrees Celsius. The skins are pressed off and fermentation continues for an additional week. The wine is then left to go through natural Malolactic Fermentation.
