Vineyard Notes: Merwah grapes come from a 150-year-old vineyard located in Bcharre in the Qannoubine Valley in North Lebanon. The Sauvignon Blanc vines come from a 30-year-old vineyard located in Ainata in the Bekaa Valley. Both vineyards sit at about 1,700 meters above sea level and are planted to limestone soils. The vineyards are farmed organically

Winemaking Notes: The Sauvignon Blanc is picked in the first week of August. The grapes are partially destemmed, partially pressed, and the free-run juice is added back on skins in stainless tanks. Punch down occurs twice daily. It ferments for three weeks at 17 degrees celsius, followed by an additional two weeks of maceration. The Merwah is harvested in the first week of October. It goes a slow ferment on the skins for three weeks and is then pressed and blended with the Sauvignon Blanc. The wines go through malolactic fermentation naturally. They are racked twice before being bottled in late spring. Minimal sulfur (18ppm) is added at bottling.
