Terracotta Amphora: Cirelli owns 800-liter amphorae produced by a Tuscan artisan in the small village of Impruneta, which is the home of terracotta craftsmanship in Italy. Each amphora is equipped with a fitted stainless steel lid to help limit extra oxygen contact.
Winemaking Notes: Harvest is manual. The Pecorino grapes are destemmed and transferred to clay amphorae to macerate for 24 hours. Then, they are slowly pressed and returned to the amphorae for spontaneous fermentation. The Pecorino matures on its fine lees for roughly 12 months.
