Vintage Notes: 2021 is recorded as both the wettest year and one of the warmest years. There were many warm fall nights allowing some of the acidity to drop out and allowing the flavor profile to ripen.
Winemaking Notes: The Riesling comes from two vineyards. The picks were vinified together in tank where the temperature of fermentation was controlled.
Tasting Notes: The structure of the wine is both ripe and sturdy. There are tropical notes (ripe nectarine) mixed with fennel seed. The Riesling has excellent balance and is a stunning example of time and place.
Farming Notes: Dave has managed the farming and consulted on many vineyards in California that are biodynamic certified. Now, he is working hard at changing farming in Northern Michigan by helping local vineyards move towards organic and biodynamic farming practices. All of the vineyards BOS buys fruit from will be non-certified organic by 2024. They all use organic fertilizers and organic insecticides with a focus on regenerative principles (minimum tilling, biodiversity, working on getting animals in the farm system). Two of the vineyards are using biodyanmic principles and compost sprays.
