Vineyard Notes: Apples and grapes both come from the Wadi Annoubine region where the soils are sandy. At 1500 meters above sea level the area has a cool, Mediterranean climate. The grapes and apples are manually harvested.

Winemaking Notes: The apples undergo carbonic maceration. The grapes ferment with their skins. The two are combined and co-fermented with native yeast in stainless steel tanks. The wine undergoes natural malolactic fermentation and is bottled before fermentation finishes to preserve the bubbles in the Sparkling Farha. The wine is unfined, unfiltered, and not disgorged.
