The Ancient Grain Sour is crafted using ancient emmer and einkorn from Meinklang Farm, combined with locally grown barley, and hopped with local Hallertau Tradition and Saphir hops. It is soured with Lactobacillus cultures and fermented with a rustic farmhouse yeast.
The project started with an idea: how can Stillwater bridge the gap between the farmer and the brewer? They saw the need for greater transparency in brewing, aiming to foster a connection between the brewer, the farmer, and the grains. This approach, they believe, creates a more holistic and complex beer. They also believe a beer can capture and convey the essence of its origin. This beer is produced from deep rooting grains, biodynamically farmed in Austria at the Meinklang Farm. It is brewed at Bevog Brewery in Radkersburg, Austria.
