C. Cassis is made by Rachel Petach in Hudson Valley, New York only a few miles from where the blackcurrants grow.
Current Cassis is inspired by ratafia de cassis, a sweet and refreshing beverage which would later become Burgundy’s beloved crème de cassis. Originally a beverage made by and for farmers, C. Cassis is equally a simple and refreshing product of the earth. The black currants that are used are farmed only a few miles away by botanist Greg Quinn – who is largely responsible for saving the once outlawed fruit! Currently C. Cassis is comprised of New York blackcurrants, green cardamom, bay leaf, lemon verbena, wild honey and citrus rinds. Simple and delicious, as it was intended to be!
