Vin de Lies stands as a snapshot of the entire winery: every terroir, every white grape, every ferment informing a single, uniquely Alpine cuvée. It is an uncommon and deeply expressive blend that brings together Jacquère, Moscato, Altesse, Roussanne, and others from both his Savoie parcels and his Italian fruit sources.
After two years of aging in tanks, foudres, and barrels, Jean-Yves racks the wines from each vessel. The remaining lees from all of these cuvées are then gathered into a single vat. A small amount of wine is added, the lees are put back into suspension, and the blend is allowed to settle and be drawn off once or twice. This gentle nourishing by the lees softens and rounds the texture.
The resulting wine is an assemblage of the “bottoms of the tanks”—a thoughtful, artisanal elevation of material that most cellars would simply discard.
