Winemaking Notes: Altesse grapes are harvested by hand from vineyards that have been farmed both organically and biodynamically. Following a long skin maceration, grapes are direct pressed. Fermentation occurs spontaneously with indigenous yeasts in neutral oak. La Grande Journee then ages in neutral oak before being bottled unfined and unfiltered.
