Vineyard Notes: The Ca' del Laito bottling is sourced from a range of vineyards in the area of Montecchio di Negrar. The vineyards are Coste (planted in 2015), Senge (planted in 2000), Cain (planted in 2005), Coare Longhe e Giulia (planted from 1990-2000) and, starting with the 2020 vintage, from Trapola (planted from 1940 to 1990!).
Winemaking process: The grapes are picked and selected during the first and the second week of October. They are immediately pressed and put in steel tanks where indigenous yeast naturally start the fermentation after 24 hours. For the next 15 days, pump overs are performed. After fermentation finishes, the wine is moved to a stainless steel tanks where it’s left for 6 months. In April, after the Bussola Amarone is racked off, the Valpolicella Classico is put with the skins of Amarone where a second fermentation begins which will last 15 days. During this time several pump overs and skin submersions are performed until fermentation completes. The Bussola Ripasso is then moved to steel tanks. After 10 days it is racked off to wooden barrels for aging.
Aging: 24 months of aging; 30% in 500-liter tonneaux thrice used, 25% in 225-liter barriques thrice used, 45% in 25-Hl barrels
