Winemaking Notes: All three varieties fermented separately before being blended and stored in neutral French oak barrels for 6 months. All Shed wines ferment spontaneously with native yeast and are vegan friendly. They are bottled unfined and unfiltered (exception: the 2023 Sit Talk Chardonnay was the only wine to be filtered for the vintage).
