Production Notes: The COS team crafts their olive oil with the same passion and respect for their ancestral land as they do their wines. The olives are sourced from 18 hectares of organically farmed groves in the contrada of Piraino, in the region around Chiaramonte Gulfi. The trees are of the Tonda Iblea variety, some of which are over a hundred years old. To protect the vitality of their trees, the COS team harvests all olives by hand. The olives are then immediately sent to the mill for cold pressing the same day.
