Sometimes the process of learning to make wine can be a hard path. When you have little experience, it is very easy to end up making mistakes. During those very first years at COS, a few mistakes were made. But Giusto and Titta have tried to release only wines in perfect conditions since inception. Everything that was not precise was used to create the mother for a vinegar which is now 40 years old.
40 Aceto di Vino Tradizionale is the most classic and traditional red wine vinegar as it was always produced by the local farmers in Sicily. It has a solera base of more than 40 years of age. It is genuine, complex and very unique.
