Viticulture: Azienda Agricola COS is certified organic but also practices biodynamic principles. The estate vineyards are located in the southeastern part of Sicily in Vittoria.
Vinification Notes: Spontaneous fermentation on the skins occurs with indigenous yeast in concrete tanks. Rami normally spends 15 days on the skins. The wine ages in concrete vats for nine months followed by three months in the bottle before release.
