Staforte is a selection of the best Garganega bunches from vines ranging between 30 and 70 years old. Graziano Prà has been producing Staforte since 2004. It is a complex and outstanding Soave Classico.

Winemaking Notes: The grapes are softly pressed before undergoing fermentation at 54-58 degrees Fahrenheit. The wine ferments and matures in stainless steel vats with regular batonnage (mixing of the lees) for 6 months. Batonnage is automatically done one time per hour using a special paddle installed in the tanks. The wine does not undergo malolactic fermentation. It then ages for at least 12 months in bottle before release.
Tasting Notes: Staforte is rounder than Otto but still delicate and refreshing. The mineral content of the volcanic terrains on which the vines grow brightly shines through on the palate. This is a complex and taut wine with texture, length and crisp acidity. Flavors and aromas are reminiscent of citrus, almond, apricot, white flowers, and apple. Pair Staforte with raw fish dishes, oysters, and lobster. White meat and pesto pastas are also good choices.
About the Name: Staforte is the old name of the town in which Graziano was born: Monteforte d’Alpone.
