The Patergarten Vineyard: The gravely Patergarten is located in the valley of Kaysersberg south of Kientzheim. The vineyard's microclimate enables early ripening of the bunches. The vines are organically farmed.
Winemaking Notes: The grapes are manually harvested. Pressing is slow and gentle. Fermentation occurs spontaneously with natural yeast in stainless steel vats equipped with temperature control. The Patergarten Pinot Gris matures on its lees in large barrels for 6 to 9 months. This lees contact contributes richness to the wine. What is more, the oxygen passing through the pores of the wood brings about a gentle oxidization of the wine, and the subsequent opening up of its aromas. The wine rests in bottle for a few years before release to the market. This bottle aging plays a role in the wine's development. Here, the opposite of oxidization happens: reactions in the oxygen-free environment bring about the development of the bouquet, and give it subtler nuances.
