Grand Cru Furstentum Vineyard: The Furstentum vineyard is composed of calcareous soil consisting of a pebbly structure. The vineyard is south-facing and sloping (37%), providing exposure to the sun and resulting in a unique Mediterranean-like flora. This terroir produces full-bodied wines with complex and powerful aromatics, which can be enjoyed at any age. Furstentum has 30.50 ha planted with Riesling, Gewurztraminer and Alsace Pinot Gris.
Winemaking Notes: The Riesling's juice was extracted with care in an air-bag press. Slow, gentle pressing avoided the crushing of stalks and pips. Fermentation occurred spontaneously with indigenous yeast in stainless steel. The wine aged on lees in large oak barrels for 12 months, contributing to the richness of the wine. Oxygen passing through the porous wood resulted in a gentle oxidization, creating rich aromatics. The wine then aged for 2 to 3 further years in bottle before release.
Tasting Notes: In its youth, enjoy this Riesling as an aperitif or paired with light appetizers, seafood spreads, smoked trout, or classic comfort fare like roast chicken or pot pie. As it develops with age, it will pair beautifully with dishes like crab cakes, seared scallops, or simply grilled white fish.
