Winemaking Notes: The juice is extracted with care in an air-bag press. Slow, gentle pressing avoids the crushing of stalks and pips. Fermentation occurs spontaneously with native yeast in large oak barrels. The wine ages on it's lees in large oak barrels for 12 months, contributing to the richness of the wine. The oxygen that passes through the wood's pores results in a gentle oxidation of the wine, and the subsequent opening of its aromas. The wine is then bottled and aged for 2 to 3 years before being offered on the market.

Tasting Notes: This wine is a beautiful shade of bright yellow. On the nose, notes of flowers and fruit salad. On the palate, the wine is soft and silky with a fruity, mineral finish. This is an easy match for white meats, crab, poultry and vegetable dishes.
