Hidden in the Miñor Valley among lush Atlantic forests are the vineyards of Pentecostés. After making his fortune in Galicia's seafood industry, Alberto Cabaco started Pentecostéss with the hopes of growing and making world-class Albariño and creating a top Riax Baixas estate. He brought on winemaker and viticulturist Jorge Marcote and they planted the vineyards in 2017 with the first vintage of wine being produced in 2021.

The estate is comprised of 3 farms in the Miñor Valley, Pazo Barreiro being the focal point for the production, located northeast of Gondomar. Purchasing the plots for the Pazo Barreiro vineyard was a feat, as, over the decades, it had been divided into 30 tiny parcels with almost as many owners. Pentecostés has turned those 30 parcels into a single 3.5 hectare estate, making it the the only D.O. Rías Baixas vineyard in the Miñor Valley region in 100 years. The terraces and vineyards were rebuilt, and planted with special attention paid to the various orientations that their location provides.

The second finca, Pazo de Moldes (also called Pousa de San Blas), located southwest of the same town as Barreiro, was built between the 13th and 14th centuries with a very different purpose from the current one: that of a defense tower. The date of construction makes it one of the oldest manors in Galicia and its initial dedication was logical, as it was located on a hill, Mañufe, from which a large expanse of the Miñor Valley can be seen. Now Pazo de Moldes is the location of Pentecostés' small winery, along with some additional vines.

Pentecostés' steep, terraced slopes grow the native whites varieties of Rías Baixas in the most natural way possible. Marcote emphasizes that he practices high attention, low intervention winegrowing. He is proactive and diligent in the vineyard, observing the vines every day. Because of the rainy and foggy conditions in this area, this attention to detail is necessary in order to farm organically. Production is carried out with every effort to preserve the delicacy and expression of the vineyard. Lees aging adds a further dimension to these excellent wines.

There are several meanings of the word “Pentecost." One might assume the origin is religious, and responds to the festival of the fiftieth day after the Easter festival. But in the case of the winery it refers to its pagan meaning, which is related to the "harvesting of fruits." It celebrates the ancient harvest celebrations where goods, ideas, and culture have been shared for centuries. It is therefore a name closely linked to the countryside and to the people who live from cultivation, care and collection.
