El Candado (Spanish translation for "The Padlock") is a unique sherry produced only with Pedro Ximénez grapes grown in the Sherry district of Spain. It is the classic Jerez dessert wine.
Winemaking Notes: Pedro Ximénez grapes are dried in the sun before fermentation in stainless steel tanks. El Candado undergoes oxidative aging for over 10 years. There are 2 criaderas and the solera.
Tasting Notes: The color is an intense mahogany. There is a deep aroma of dried fruits (raisins, figs) and subtle notes of chocolate and coffee. It is smooth and velvety in the mouth with a long after taste. Serve with desserts, at room temperature or slightly chilled. This is delicious with dark chocolate pudding or poured over vanilla ice cream.
