About Oloroso Sherry: Oloroso sherries are fortified beyond 17% alcohol. Flor is not able to develop beyond 15% of alcohol. The aging here is oxidative where the wine is in contact with air, gaining in concentration. Olorosos require longer periods of aging to concentrate and show finesse and elegance.

Aging Notes: This sherry is classified as V.O.S. (Very Old Sherry), which means it has to have an age of 20 years or older. The Valdespino Don Gonzalo Oloroso is over 25 years old. This is a dry style of oloroso with only 8 g/L of residual sugar.
Tasting Notes: The mahogany color has a beautiful bronze glimmer. The aroma is nutty, reminiscent of walnut and hazelnut. There are hints of cocoa and smoke. Soft on entry, Don Gonzalo is round and velvety; it engulfs the palate. Although 21% alcohol, this dry wine feels bright on the finish; it is well balanced and has a long life ahead! Don Gonzalo VOS is delicious as an aperitif with roasted nuts but also pairs with smoked meats, game dishes, and matured hard cheese.
