Agave Source: Santiago Matatlán, Oaxaca; known as “Capital Mundial Del Mezcal – mezcal capital of the world.”
Cooking Method: Steam powered radiant heat; this unique oven produces a mezcal that is a pure expression of Espadín, without the influence of smoke that is typically found in other mezcal
Crushing Method: Tahona (grinding stone)
Fermentation: Native yeast fermentation in pine vats; 7-13 days
Distillation: Twice
Still Style: 300 liter wood fired copper pots. Well water is added to reduce ABV to 40%.
Water Source: Deep well
Aging: Joven - unaged
Tasting Notes: This young mezcal has aromas of pears and kirsch on the nose. It displays robust flavors of Espadín Agave and a strong sense of earth on the palate. The finish is soft yet spicy and lingering. An elegant and smooth mezcal that is delicious on its own and shows versatility in cocktails, setting it apart from all other mezcals.
Spirits Journal, March 2010
"Clear and impeccably clean. Offers slightly sweet and subtle aromas of road tar, charcoal, and baked green apple in the opening sniffs; after aeration, the baked apple morphs to baked pear as the bouquet goes from slightly smokey to ripe orchard fruit. Entry is gently sweet, round, firm, and ripe; mid-palate is gracefully pitched, with a taste profile of tree sap, maple, candied nuts, ripe agave pulp, and refined sugar. Ends on a honeyed note that is chewey and appealingly sweet."
