A mainland expression of Assyrtiko from the foothills of Mount Olympus, grown organically in the clay and flint soils of Tyrnavos. Fermented with native yeast and raised in stainless steel, the wine is all about freshness, texture and the mineral side of the grape without the sharper, more austere profile often associated with Santorini.
Bright citrus, Meyer lemon and green apple lead into subtle white flowers and flinty mineral notes. The palate is dry, crisp and lightly textured, with plenty of acidity and a salty, clean finish.
