Made from high altitude Java sugarcane grown on the steep slopes of Santa Maria Tlalixtac, Oaxaca, this rum is un-aged and was bottled at cask strength, without any added water. Altos Esteres was fermented in pine tanks for 25 days. Copper pot distillation. Savory aromas of pickled capers, olives, tomatillo, along with herbal and grilled pineapple aroma making for a very complex expression.
