Vinification: Manual harvest. 143 fermentation with native yeast. No fining. No filtering. No sulfites added. Bottled at 11 g/L to create a pétillant naturel style cider.

Winemaker's Note: “In 2021, Sky Fruit was the inaugural cider we made from our estate apples. This cider includes one of our favorite apples, an unnamed cherry red apple that smells and tastes like cherry blossom. We were excited to make it again in 2024. The small apples and warm growing season contributed to the concentrated flavors and higher alcohol.”
