Vinification: Manually harvested. Native yeast fermentation using pied de cuve of Folklor estate grapes. Pears were sweated for two weeks before pressing. Pinot Gris was gently foot tread and pressed whole cluster. Bottled at 10 g/L to create a pétillant naturel. Hand disgorged. No added sulfites.

Winemaker's Notes: “We have been acquainted with Ken Stanek, the grower at Lakeview Hill Farms for several years. When he approached us about buying fruit this year, we were excited to work with this incredible vineyard site which overlooks the very north end of Torch Lake and east Grand Traverse Bay. What really sold us was the old Seckle Pear tree growing in the middle of the vineyard block. The pears-unsprayed and perfect-were just asking to be co-fermented with the grapes! The result has a great balance of acidity, with just a whisper of pear cutting through the Pinot Gris.”
