Vineyard Notes: While Pedro Ximénez is traditionally associated with Pisco production in Chile, winemakers Cédric Nicolle and Diego Edwards identified a unique 1-hectare parcel in the Limarí Valley—approximately 200 miles north of Santiago—that showed exceptional promise for still wine. Planted in 1999 and trained in pergola, the vineyard benefits from calcareous soils and a cool coastal influence, providing ideal conditions for preserving freshness and aromatic intensity. The vines are sustainably farmed with a deep respect for the environment.
Winemaking Notes: Grapes were hand-harvested and fully destemmed. A brief cold maceration preceded fermentation and aging, both of which took place in stainless steel to maintain the wine’s crisp, fruit-driven character.
Tasting Notes: Vibrant and aromatic, this dry Pedro Ximénez opens with notes of apricot, banana, pineapple, honeydew, and white flowers. On the palate, lively acidity and medium body frame flavors of red apple skin, tangerine, and canned peach, with subtle undertones of chamomile, coriander, cucumber, and mint. Refreshing and versatile, it shines on its own or paired with lightly spicy cuisine.
