Vineyard Notes: Grapes come from 80-year-old Carignan vines that are growing 'wild' on clay and quartz soils. These are ungrafted bush vines which grow in wild bunches, 18 feet off the ground! They see no pruning or irrigation so they vine up into trees, so harvesting is always manual and requires ladders to reach all the bunches.
Winemaking Notes: After native fermentation in stainless steel tanks, wine is aged for 18 months in used, neutral French oak barrels. The 'Silvestre' is bottled unfined, unfiltered, and with minimal SO2 at bottling. This is a completely family-run project, including the label art made by the father, a painter.
Tasting Notes: Delicate, soft and round tannins on the palate balance with a food-friendly acidity bearing traces of cherry and strawberry.
