Vineyard Notes: This vineyard is planted with a mix of olive trees and grapevines, resembling the traditional local farming, pre-1948, and preceding the arrival of phylloxera. The presence of the olive trees is complementary and not competitive, adding depth to the flavors and aromas of the wine, by encouraging a deeper grapevine root structure.
Winemaking Notes: Grapes were harvested by hand in September and 100% destemmed. The various varieties were co-fermented. The wine saw daily manual punch downs and skin maceration for two weeks. Malolactic fermentation occurred naturally. After three rackings, the wine was bottled unfined, unfiltered and with minimal added sulfur.
