Vineyard Notes: Fox Hill, Chevalier and Mee vineyards - alluvial, rocky sandy clay loam derived from sandstone; Las Cimas and Lost Hills vineyards - colluvial rocky, gravelly loam derived from sandstone and schist; Cole Ranch - colluvial, fine pebbly loam derived from limestone.
Winemaking Notes: each varietal is vinified separately; whole cluster skin maceration during fermentation (7-10 days). Natural primary fermentation, no temperature control or fermentation aids of any sort. Full native malolactic conversion. 10 months on lees, one racking prior to blending/bottling. No sulfur at any point in the winemaking process.
