Le Caban Riesling each vintage represents perfect BALANCE, or when the letters are mixed up just a little, LE CABAN. In the case of Riesling, that balance is possible thanks to the interplay of acidity and sugar. Balance isn’t achieved by predetermined goals, but by listening to what the fruit from each vintage has to say. 2022 saw a hot, dry summer which continued during harvest. Grapes were picked at optimal ripeness to achieve pronounced acidity balanced with a medium amount of residual sugar. The wine fermented and aged in stainless steel.
