Crémant is a French term used for any sparkling wines not made in the Champagne region. The Left Foot Charley crémant hails from the great vineyards in Northern Michigan. Pinot Blanc from Old Mission Peninsula and Chardonnay from Benzie County are grown specifically for this wine. Saperavi is a Georgian grape gown by Manigold Vineyards on Old Mission Peninsula. It adds a beautiful rosy hue and subtle red fruit aromas.
The grapes are whole cluster pressed, and only the heart of the pressing is chosen for the fermentation. This is the purest of the juice and has the most delicate texture. This practice minimizes bitterness and accentuates fruit qualities. The settled wine then completes second fermentation in a closed tank (Charmat method) to build the bubble structure. It is bottled young and meant to be enjoyed within the first few years.
