Seoul Night Soju is a Korean plum soju from The Han, a distillery in South Korea known for its maesil (green plum) craft.

Production Notes: The Han uses perfectly ripened golden maesil that heightens the floral aromatics. The maesil is macerated in neutral cane spirit and sweetened with Jeju Island honey. Then, the maesilju is double distilled in a vacuum still where alcohol vaporizes at 100°F instead of 173°F. This process retains delicate esters and provides lightness to the spirit. Juniper berries are added during the distillation process to give an extra layer of spice. The soju is cold filtered for a clean, velvety finish.

Tasting Notes: Expect floral plum notes with clean flavors, smooth texture and a dry aftertaste. Serve chilled, on the rocks, or lengthened with soda or tonic alongside raw seafood or spicy Korean fare.
