Winemaking Notes: The Cabernet Sauvignon and Sangiovese grapes are manually harvested. They grapes ferment separately in brushed concrete vats with skin maceration for roughly 19 days. A pied de cuve is used to start fermentation. The Cabernet is transferred via gravity to French oak tonneaux for 18 months while the Sangiovese matures in concrete. The wine is bottled unfiltered. All work in the winery occurs by gravity.
Tasting Notes: This wine has fantastic "Toscanity!" The Cabernet brings ripe fruit while the Sangiovese brings acid and tannin. The Mastrojanni San Pio is a hearty yet approachable red wine. It delivers a full offering of aromas that span from bright cherry fruit to exotic spice. There are some budding tertiary tones of cola and crushed mineral that add complexity. San Pio is a beautiful Super Tuscan that will taste great with a succulent cut of beef.
Terroir Notes: It rains very little during the summer in central Italy. Montalcino might get two consecutive months without any rain. Therefore, the vines have to dig deep into the soil for water. Continuous sea breezes known as the Maestrale and the Libeccio keep the vines dry and the insects and plant diseases under control. In addition, Mastrojanni is located near Mount Amiata, a volcano which became extinct 700,000 years ago and which is 1,738 meters high. This mountain determines the Mastrojanni microclimate because at night cold winds come down from the mountain causing a large diurnal temperature change that refreshes the vines from the summer heat. When a storm is close by, curiously, this mountain often diverts it thanks to its rising currents. Mastrojanni is therefore better protected from hailstorms, for example, than other areas of Montalcino. Mastrojanni has been in conversion to biodynamics since 2022.
