3 Fonteinen 'Cuvée Armand & Gaston' is a blend of one-, two- and at least three-year old 3 Fonteinen brewed lambics. It is spontaneously fermented, matured in oak barrels, and then sees extended bottle aging and refermentation in bottle. It is unfiltered and unpasteurized.
For this specific 'Cuvée Armand & Gaston', 3 Fonteinen blended lambikken from four different barrels and six different brews. Almost half of the lambikken used were three-year and four-year old lambikken, rendering the weighted average age of the geuze blend to more than 25 months at the moment of bottling. More than 60% of the cereals used during brewing were sourced in their own Cereal Collective.
