Winemaking Notes: The Sauvignon Blanc grapes are harvested at night to preserve freshness. They are destemmed and then macerate for 24 hours with the skins before pressing. Fermentation temperature is maintained low (15-18°C) to enhance fruitiness. The wine ages in stainless steel tanks.
