Winemaking Notes: The Grüner Veltliner grapes are sourced from sustainably farmed vineyards. The grapes are destemmed, crushed, and left on their skins overnight. A cool, long fermentation helps retain the Grüner's aromas and flavors. The wine spends one month on the lees, which is long enough for added texture while keeping bright aromas and flavors. The wine is lightly filtered, and some CO2 is added for zippiness.
