Wine Notes: Castelcerino is Filippi’s entry level Soave. The grapes are sourced from the estate’s various vineyards in Castelcerino. The wine is given the same care as all of the other wines. The grapes are harvested by hand in small crates and gently pressed. Fermentation occurs in stainless steel vats with native yeast. The wine remains on its fine lees for a varying number of months depending on the vintage. During this time, the wine decants naturally and undergoes no filtration before bottling. SO2 additions are extremely minimal.

Terroir Notes: Located in Castelcerino, Filippi sits at the highest point in Soave. The hills reach up to 400 meters (1,300 feet). It is a secluded spot with around 40 acres of vineyards surrounded by dense woodland. Filippi believes in biodiversity and farms his land organically and biodynamically. Castelcerino sees a considerable swing between day and night temperatures, which helps concentrate flavors and fashion fresh and mineral wines.
