Vineyard Notes: Pedro Ximenez from the Limari Valley (200 miles north of Santiago) is typically used for Pisco production but winemakers Cedric Nicolle and Diego Edwards found a particular 1-hectare parcel which they thought had potential for making high quality wine because of it's calcareous soil and proximity to the coast. The vineyard is sustainably grown and was planted on pergolas in 1999.
Winemaking Notes: Grapes for this dry, still Pedro Ximenez were de-stemmed. Cold maceration was followed by fermentation and aging in stainless steel
Tasting Notes: Fresh apricot, banana, pineapple, honeydew melon, and white flowers jump out on the nose. The bright acidity and medium body lead to notes of red apple skins, tangerines, and canned peaches with hints of chamomile, coriander, cucumber, and mint. Delicious by itself or with anything slightly spicy.
