Terroir Notes: The diurnal shift in Liguria allows the Pigato grape to retain impressive acidity, which is what makes this wine so lovely and crisp. High hills facing the sea, kissed by the sun and tucked in with the cooling winds that blow down from the Alps and the northern Apennines, protect the area from humidity and result in the region's finest wines.
Winemaking Notes: The Pigato grapes are manually harvested. Once at the winery, the grapes are put in the press and left overnight. Part of the harvest is pressed the next day while part continues to macerate for 36-72 hours. Ambient yeast are used for fermentation. The macerated wine is pressed and moved to untoasted acacia barrels (1st, 2nd, 3rd-use). Fermentation continues in the barrels with weekly lees stirring for about four months. The skin contact imparts a good body while the bâtonnage imparts a creaminess and baking spice flavors. The wine matures in stainless steel until ready for blending.
Tasting Notes: This Pigato white wine is exuberant and aromatic with notes of mandarin , spice, honey, and acacia flower. Cascina Praié has produced a dry, harmonious wine that is rich in texture with lovely mineral hints on the finish. There is no mistaking this wine as anything other than Pigato from Liguria.
