The Xarel-lo grapes are grown organically on calcarious clay soils and hand harvested with direct press in stainless steel tanks. The ancestral method is used to create this sparkling wine which is then bottled unfined, unfiltered and without additives of any kind. The wine ages for 10 months in bottle with its fine lees.
