Winemaking Notes: Making Vin Santo is a painstaking process. Individual bunches of Malvasia and Trebbiano are manually harvested early to preserve acidity. The Malvasia and Trebbiano grapes dry for 4 months over bamboo mats in what is known as the “appassitoio,” or an open-windowed attic room. Then, the dried grapes are pressed and put into small, old barrels for fermentation and aging. Fermentation initiates with a dose of “mother” Vin Santo. Then the barrels are sealed with wax and left to ferment and age in the “vinsantaia,” the designated Vin Santo room. For smaller Vin Santo programs, the vinsantaia and appassitoio are often one in the same. Travigoli fills their barrels half way; CO2 fills the barrels as the grapes ferment and protects the wine. Travigoli ages its Vin Santo for 5 years. This far exceeds the minimum 2-year DOC aging requirement. The Vin Santo is left in contact with its lees, neither racked nor filtered, during the aging process. Fermentation stops and starts throughout the aging, primarily occurring in the spring and fall with the extreme temperatures in summer and winter causing the wine to go dormant. As the Vin Santo ferments and ages, much of the wine evaporates.

Cellaring Potential: 30-40 years

Tasting Notes: The Travignoli Vin Santo is a golden amber color. The nose shows candied fruit, caramel, and honey. Hints of smoked meat appear as the wine opens. The acidity is strong and balances the oxidative flavors. This Vin Santo is suited for both cheese and dessert.
