Traveling through Champagne years ago, we found the still vin clair base wines to be a revelation. The blanc de noir base wines, not yet sparkling, had the fruit tones that we love in Pinot Noir, but also the focus, freshness and agility of a crisp white wine. We quickly started imagining the Scribe version. We harvest Pinot Noir fruit early in the season and the whole clusters are put immediately to the press for a slow and delicate separation of juice and skins, preventing extraction of any color or bittering tannins, while capturing brightness, vibrancy and an elegant, smooth texture.
Tasting Notes: Apricot, Tarragon, Honeysuckle.
Vineyard Notes: Scribe’s Estate vineyard on the southwest-facing slope of Arrowhead Mountain in the southern Mayacamas Volcanic Range.
Winemaking Notes: The grapes were pressed very gently to avoid color extraction from the red skins. After a 24-hour settling, the juice was racked and fermented cold in stainless-steel tanks for 15 days. Malolactic fermentation was arrested. The wine was aged for 5 months in stainless-steel drums prior to bottling.
