Wavy's newest release is a salty mineral driven pet-nat made from macerated Palomino and Chardonnay. The Palomino was sourced from two distinct plots. The first from the Sonoma Valley where they were able to discover vines dating back to 1890. The second plot comes from Fresno of all places. Gina Nonini has been farming Demeter Certified Biodynamic since the mid 90’s. Mixed in there is Chardonnay that was impeccably farmed in the Redwood Valley of Mendocino County to give this wine that extra freshness and texture.

NRG sat on the skins for 24 hours before being pressed. It was then aged in stainless steel tanks until it was nearly fermented dry. We bottled and left the wine non-disgorged to give it a lively haziness.
