Sugar Source: Clairin Pignon is made from a mixture of vinasse, sugarcane syrup, and water. Vinasse (dunder) is the dense and flavorful matter left in the still after distillation. It is collected, saved, and then added to the sugarcane syrup before fermentation. The sugarcane syrup is sourced from nearby producers.

Tasting Notes: Clairin Pignon has a wonderfully unique personality because of its raw ingredients. Who else uses dunder in their rums? Jamaicans! Clairin Pignon tastes of the rich toffee, honey, savory tropical fruit, and funk that is reminiscent of Jamaican rums. But it also has notes of pure sugarcane deliciously present on the palate. It tastes different from Clairin Milot, not as high-toned, but there is a throughline of Haitian style and terroir. Agave lovers and rum lovers will both enjoy this.
